Quick, lasting food for woking peep’s!!

I made roasted peppers last night and I’ve been noshing on them all day.  With our busy lives, making something that can stay in the fridge or be transported to the office “or” can be eaten hot or cold is important.  Here is my first in a series of quick, easy, gourmet food.

 

Roasted peppeers:  Buy 6-8 large red bell peppers and cut in half.  Remove seeds and slice into quarters.  Then fill a bowl with Extra Virgin Olive Oil, put the pepper slices in and smother with the oil.  Then lay out on backing sheets covered with tin foil and shake salt and pepper…. a lot of salt and pepper.  Put in oven for 2.5 to 3 hours at 275 degrees.  Then put in Tupperware and throw it in the fridge!!Image
